I know, because Windy Meadows’ pastured meats were a game-changer after I was
diagnosed with four different autoimmune diagnoses back in 2017 and 2018. I began to
clean up my diet, removing cheap lunch meats, all fast food, most convenience and
processed foods, etc but it seemed like even though I had cleaned up my diet, I just
seemed to have more sensitivities and inflammation than ever!
It was only once I was told I had Mast Cell Activation Syndrome (MCAS) that I found the
clue : histamine intolerance. That’s why these big batches of bone broth, bit batches of

otherwise healing meal into a trigger for my conditions.

including asking my local butcher at Kroger to freshly grind beef roasts and chicken
breasts and then rushing home to freeze it. But inevitably, it had already sat in the
processing plant and on the shelf at the grocery store.

goes from a live animal to the freezer in under an hour. This is a HUGE advantage for
someone like me or anybody else looking for a source of low-histamine meats!
They even let me tour the facility to watch as the meat went from pasture to package in
just a few minutes, significantly reducing time for histamines to build up.
I didn’t know this when I found their website, but they’re the only privately owned USDA-
inspected poultry processor in Texas!
